Oops! My intention was solely to differentiate separate uses with and without "el" with "ser" in the phrase "today is...".

However, I seem to have confused the situation rather than clarified it....

I don't see a rule in this yet. But I gues it's a matter of sounding natural or not. Hoy es lunes as Andy said indeed does not need an el. The other examples do need the el.
