Forum members in this poll seem to define "polyglot" as "4+ languages". Therefore according to the IMDB Natalie Portman qualifies. Natalie Portman speaks 5 languages fluently (Hebrew, English, French, German and Japanese), as well as some Spanish. Natalie has appeared in a number of movies, but is probably best known as Queen Amidala in the three Star Wars prequels.
I remember an article which mentioned she was filming a movie (don't know which one, sorry) in Germany. The crew/film staff were German and could speak no English. Apparently Natalie talked to them in German between takes and became very popular with the staff.

Let's add Peter Ustinov for good measure, he is said to speak 6 languages. I read a detailed article about this and spoke to his wife once but can't remember the list.

He acted in many, many films, but I remember his performance of mad Roman Emperor Nero in "Quo Vadis?" (1951). He won Oscars for his roles in Spartacus (1960) and Topkapi (1964).

I think Peter Ustinov actually had Russian ancestry so he was speaking Russian from an earlier age. He died recently which was a sad loss.

Yes, I remember something about this from his obituary. I think that he spoke Russian and German from his father who I believe worked for MI5 during the war and French and Italian from his mother, English obviously since he was born here and possibly either Spanish or maybe Turkish - I may just be getting confused with him being in Topkapi.

I've read somewhere that Christopher Lee can speak twelve languages, among them: French, Italian, Spanish, German, Russian and Greek.
