How different are MSA and dialects?

Are they similar enough that after learning MSA I can learn the dialects by just knowing the different pronunciation for same words, or are they completely different in terms of grammar and lexicon as well?

In general, the answer to your question is no. As far as I know, all dialects have some grammatical differences from MSA, and certainly they all have quite varied vocabularies. What dialect are you interested in? The answer to you question in terms of severity depends largely on that. The Arabic spoken in Yemen is much, much closer to MSA than than the Hassaniyya dialect, for example.
