For Faroese, here are some ideas (it looks so lonely and empty there on the first page, so sorry if any of these are duplicates that haven't been added yet).

- Faroese, A Language Course for Beginners (Published in 2009 and a decent introduction to the language) Can be seen for free here: http://www.scribd.com/doc/62002530/Faroese-a-Language-Course -for-Beginners-Textbook And here are the audio components: http://www.stidin.fo/FaroeseCourse/

- An Introduction to Modern Faroese, by Lockwood (Kind of old and dated but has some good grammatical information, wordlists, etc) http://books.google.com/books/about/An_introduction_to_moder n_Faroese.html?id=OGj4rnr0oxYC

- http://sprotin.fo/dictionaries_dictionary.php Here is a good dictionary with Faroese-Faroese, Faroese-English-Faroese and a few other languages supported. It even shows declensions/conjugations/etc!

- http://kvf.fo/ Here you can see some Faroese news and tv programs, unfortunately there are rarely Faroese subtitles.

- I'm making some flashcards for Faroese on StudyBlue, starting with stacks for each chapter of the Faroese Language Course for Beginners book. Here you can see and use chapter 1: http://s.tudy.it/twd426z

Haven't seen if it was alreay posted, but for Swedish tv series, quite easy and with swedish subtitles, there's Äkta människor, which is a sci-fi drama.
