I studied Korean for a couple of years and then stopped for a couple of years. Now I'm
restarting my studies and I have a couple of pretty basic questions.
1.) What's the difference between saying 해요 and saying 하세요? I think 하세요 is more
polite, but is that the only difference?
2.) What's the difference between the verb 좋아해요 and the verb 좋아요?

1) {verb stem}+(으)세요 is, indeed, more polite than a normally conjugated ~요 form. It is used particularly often with requests (especially with 주다 as 주세요), though I've seen it used in some non-request sentences as well. I've not really seen any indication of any other differences, though.
2) 좋다 vs 좋아하다
좋다 = "to be good" (an adjective / descriptive verb), however it is often used more like a passive verb meaning "to like"
좋아하다 = "to like" (active verb)
If you are using 좋다 to "like" something, the main thing to remember is that the liked object must be the "subject", not the "object" of the sentence, since it is a passive construction.
"김치가 좋아요." is roughly equivalent to "김치를 좋아해요." in meaning.

하새요 or any other verb with (으)시 added is not just polite, it is honorific. It is used
to talk about people older than you or of a higher social status. You cannot use it to
talk about yourself.
