I'm having trouble with these couple of words. I've seen them used many of times but
don't understand when to really use them because when I don't see the need to use them,
they are used.

doch, schon, mal (einmal), denn.

Check out German modal particle. Denn is not listed, but like many of the other modal particles it's usually a filler that you can safely ignore and don't need to add to your active repertoire for the time being. For sentences with "denn" and their English equivalents click here
