My first choice would be Korean. I have a brother and sister who were born there, and my brother has studied Korean up to what seems like the intermediate level.

Mandarin Chinese is the most widely spoken Asian language. Most people agree that it's a challenging language, but it is rather practical.

Indonesian or Malay would be somewhat easier, and either one is spoken by a large number of people.

The way Thai looks has always appealed to me.

Vietnamese- I love this language when it's sung especially by Huong Thanh

I have only 3 of them on my list:

Mandarin: I like how it sounds (erhua included, I think 一点儿，一会儿。。。 sound
especially cool, but I like them without 儿 too), and I found chinese characters
fascinating and useful. I have already started to study it (30 loooooong Pimsleur
lessons and now I'm studing with Assimil) because I think it's the most useful language
on my list.

Korean: I'm interested in Korean media and culture so I already spend some time
listening Korean. Hangul is a script easy to learn (and pretty!) and I'd like to know
more about its grammar. If someday I achieve an intermedium level in Mandarin, I would
like to learn it.

Japanese: I have some friends who speak it and it's very easy to find Japanese students
in my city. Of course, I like the language (how clear it sounds, the different kinds of
characters...).
