the text in the 50s 70s 90s and 2011, is always the same or have they changed it over the
years? I'd like to know how many different editions are.

There are various editions or "generations". How many there are, depends on the target language as well as the base
language.

From an English base the different generations are called: Assimil XX without Toil, Assimil XX with Ease, Assimil New
XX with Ease. In French: Assimil Le XX sans peine, Assimil Le Nouveau XX sans piene, Assimil Le XX.

Assmil L'allemand sans peine = Assimil German without Toil
Assmil Le nouvel allemand sans peine = German with Ease
Asiimil L'allemand - no English edition yet

Yes, they have different text. The first lesson in German with Ease starts with "Herr Ober! Der Tee ist kalt!", but the
rest of the content is different.

Does anyone have any thoughts about which generation is best? I read a post which said
they have gotten worse.

Amazon.co.uk lists two versions of Assimil French with Ease: one from 2002 which has 4
CD's, and one from 2008 which has 1 mp4 CD. They also have Sing your way to French (book
+ 1 CD), from 2007. Can anyone untangle these for me?

Both of those have exactly the same content. I can vouch for the quality of the New
French With Ease course though some older generations may be better in terms of their
scope and thoroughness.

If you want an overview of the different generations I recommend you watch this video:
