Hi
I have loaded the sound files from the assimil mp3 onto my ipod. However, I can't seem to get the text for the lessons to appear, and the instructions that come with the course don't fully explain how to do it, nor does the assimil website. the box of the course promises you can see the text on the screen of your ipod/mp3 as it plays. If anyone can tell me how, I will be forever grateful

The only thing I could think of it if they would put the text in as lyrics in iTunes; though I’m not aware of any
function to view the lyrics whilst listening to a song albeit in iTunes on the computer. Would it not be more
practical and easy on the eyes to use the booklet?

You can right-click a song and choose "info" and there's a tab for lyrics.

On the iPod classic, you can click the wheel while listening to a song to cycle through the song info, one of them is the lyrics (assuming that the text is actually stored in the lyrics field).
