Japanese is neither OSV nor SOV, it is just (whatever)V. Subject is being omitted if possible, same goes for everything else, if there's only a slight chance to do so.
Getting used to that kind of "reducing to the bare bones" really helps, especially while speaking casually.

You've only been studying for a few months? I don't know how much your studying but if it's a normal exposure of about 1-3 hours per day then it's quite normal that you're having the problem you're describing. This was many moons ago, but I had the same trouble with German. I would only hear the tail end of what was said and this lasted for a very long time (a few years) and it was frustrating! I didn't notice, however, that the whole time the sentences were getting longer and more complex. You may be understanding more than you think, especially at such an early stage :)
