We hebben IETS lekkers gegeten. We hebben VEEL moois gezien. Ik heb WAT leuks voor je.

The words in capital letters indicate a quantity and after a quantitative word the adjective takes an s. If you leave out 'iets' and 'al' in your example is doesn't take an s. 'Maar niet te duur graag'.
