Last year I took Spanish. This year, I'm taking Chinese at the local college. (Then I'll need Arabic and
Russian for the top 5.)
What are some good audio resources for Mandarin Chinese? I have no trouble remembering pīnyīn and the
characters are going to take practice, but what I need most is ear training to separate tones. What is out
there?

There are many more. Most of these have free material which can be used for a lengthy period of time.

Rutgers RMCTS has 2 audio files per lesson. Audio quality isn't great but it's native voices and starts at beginner level.
I sometimes put videos from VOAChina's YouTube on to listen to in the background while I'm doing other things. I'm not a a level where I can understand more than a few words occasionally yet however.
There's also the Happy Chinese series on YouTube which is also available on the CCTV Learn Chinese page, where there are a lot of other video series available.

I'm guessing Hertz meant the the 5 official UN languages in addition to English.
