I'd eventually like to learn Norwegian. Unfortunately, my go-to programs don't have much or anything at all for Norwegian (Pimsleur only has 30 lessons, Assimil does not have an English base for Norwegian). What are some good programs for an absolute beginner? Are there any programs for Norwegian that work similar to Assimil?

Since you like Assimil, you may try the Norwegian course by Linguaphone. I have not
used the particular course, so I am not sure if there is a translation, but the
explanation is in English. Their principles are quite similar: as much reading but as
little grammar and explanation as possible, with good-quality target language-only audio.
Norwegian is very popular here, and there are many threads about it. You can have a
look at the followings, among many others:

Thanks guys! I got myself a copy of Teach Yourself and will probably use the ntnu.edu site as well, it looks good. I've read a lot about Linguaphone on this site; I will see what it's all about after this post

Where did you see the Norwegian Languaphone? I looked on the Linguaphone website and it seems they don't have it for Norwegian.

There is one from 1964 (with later revisions), they might not sell it anymore. Just get
a used copy or an illegal one from the internet.

Learn Norwegian by Sverre Klouman is good stuff. It starts assuming no knowledge and by
the end is teaching you Norwegian IN Norwegian.
