Well, remember you can write about 10 different things with 50 words each in order to get a "page" for the challenge. There is no requirement for them to be consecutive. Don't think of it as a page of a book, but rather a convenient number of words which happen to be lumped together.
If you want to write hundreds of individual four line Haiku poems, and have them corrected individually and then lump them together until it adds up to 500 words, go for it.
If you want to write one sentence per day, and have each one corrected, no problem. If you want to write a 25,000 word book, and never have it corrected, again, no problem.
Edit: Found the Discussion Thread!

LANGUAGE: Spanish
CHALLENGE: Full
CURRENT LANGUAGE LEVEL: Somewhere in the B range
COMMENTS: Like many people have said, my "input" skills are much stronger than my "output" so this is the
perfect challenge for me right now! I've seen a lot of progress in my listening comprehension thanks to the
super challenge so I'm hoping it will be the same with my speaking and this challenge. I'm looking forward to
some fun conversation and writing, but also opportunities to really focus on proper pronunciation and more
challenging writing tasks =) I'll probably be posting my speaking on soundcloud but I haven't decided about
the writing yet.

LANGUAGE: Spanish
CHALLENGE: Writing only
CURRENT LANGUAGE LEVEL: B1/B2?
WILLING TO CORRECT: Yes
COMMENTS: It's a time to switch from "intermediate" to "basic" level. I am quite strong in comprehension, so I just
need to "activate" the active skills.
