I have noticed in works of Schopenhauer and Nietzsche that words that are spelt in
modern German with a 't', appear in these works with a 'th'.
For example:
'Theil' and 'theilen' instead of 'Teil' and 'teilen', respectively.
'thun' instead of 'tun'.
etc.
Can anyone point to some resources on spelling reforms that cover these changes? I
have seen the odd article on Wikipedia covering various German spelling reforms, but
never found anything on 'th'.

The spelling of these words was changed after the Orthographische Konferenz von 1901.
Basically, "th" was replaced in pretty much all German words with "t." For more information see the Wikipedia entry that I linked to.
