Thanks for everybody's suggestions! However, in most of these books there are just
bits of other languages. I was thinking about books which use several languages
extensively, to such a degree that it would be impossible to read them without
understanding all the languages used.

War and Peace by Tolstoy starts in French.

Sapkowski's Reynevan trilogy has quite a bit of non-Polish text, but in various languages rather than one: Latin, German, Czech, Italian, French.
According to Polish reviews, his ┼╗mija also has so much Russian that it's difficult to read. (I've read the beginning but it's obviously hard to judge)

Oh and Luntiala wrote an awesome SMS-story, mostly in Finnish but with some Swedish, English and one message in Spanish. I apparently missed a whole storyline in Swedish :/
