What are your favorite time tracking tools for various activities?

If you mean measuring how much time one spends on an activity, I tend to use
gqTimer. It's originally meant for speedcubers, so
it has some functions such as calculating averages, means and standard distortions of various
amounts of times; storing last 30 sessions' results; or generating scrambles. But does just fine for
language learning, too. To get the total time, I just need to multiply the session mean by number of
times, that's the only inconvenience.
If you mean making sure an activity lasts a certain amount of time, Anki has an inbuilt timeboxing
function, otherwise there are multiple YouTube videos like "x minute countdown timer", often with
sound signals.

Pen, paper, 6 columns- class, speaking, writing, reading, listening, total for that week.
Works for me and is energy saving to boot.

Pen, paper and my watch. But I generally go by units (one unit per day etc.) and not by time spent on studying.

I really don't think in terms of time spent though, but on how much progress I've made or completed tasks.

Of course there must be a time goal at some point.

I just use the timer on my iPhone. I set it anywhere between 15-30 min and I do my best to only dedicate time to
studying a particular language. When it goes off, I record it on Evernote or pen and paper. A simple method but it
works :)
