I don't know the exact reason, just that it is being used that way with the main meals of the day.
zum Abendessen / zu Abend
zum Mittagessen / zu Mittag
zum Frühstück [but NOT 'zu Morgen']
It is not always obvious whether "zu/zum" refers to the meal as a whole or rather to the main meal to which something - like a drink - is added. But mostly it refers to the whole meal.

Ich trinke Kaffee zum Frühstück.
Which normally would imply that the coffee is just part of a full meal (bread, butter, etc.). Using this sentence you are making clear to others that what you drink, or will drink, is coffee (and not tea or juice). It doesn't refer to the rest of the meal.
If you drink only coffee in the morning, without eating anything, "Frühstück" would probably not been used, since the term makes people think of a meal that includes solid food. You would have to express it differently, for instance:
Ich nehme/möchte/esse kein Frühstück. Ich trinke nur einen Kaffee.
I won't have (a full) breakfast. I'll just have coffee.

"mit" is odd and would never be used here. To German ears it also sounds a bit as if the whole breakfast was fluid, which is awkward. In English the same construction works alright.

Kaffee ist mein Frühstück. / Mein Frühstück besteht aus Kaffee.
This should get you the intended meaning ("I drink coffee *as* breakfast"). Prosody
might play a role though...
But keep in mind that this could come across quite cheesy depending on the situation.
But that's probably the case in English too.

Gemuse, if that helps, other languages might have just the same structure, for example, in Russian I can say "Я пью кофе к завтраку", which is a literal translation of "Ich trinke Kaffee zum Frühstück" (you can even see that we have dative in both sentences). It's not used really often, but it's correct and pretty colloquial. And we also wouldn't use our analogue of "mit", it just wouldn't make any sense. I don't know if "I drink coffee with breakfast" sounds okay in English, but for me it's like breakfast is a creature I drink my coffee with, haha.
If only I could predict or detect cases when German works just like Russian, including same genders in both languages, verb prefixes and prepositions -_-

6WC, day twenty eight
In order to prepare myself for the final Sturm I spend like 60 minutes writing:
I think it's an easy guess, hehe.
Aaaand then it was the time to work. In 80 minutes I got absolutely exhausted and angry, because all the prepositions theme hasn't really became any clearer. Now I surely hope for some other textbook, and I do have a choice, haha.
So that's how it ended:
92,8% for the last one, which was like a reference work and 91% for today's work. Meh! But even though I was aiming for 100, I didn't expect that I will manage 90%. Actually with that fuss about prepositions I don't even think this resembles my real level, I do have to work it through some other textbook.
At least now I can add another completed textbook to (very short) list of materials I have actually finished. Hoorah! That's what 6WC does to you :D

6WC, day twenty nine
Heute ist der Tag der Faulheit. Ich habe nur ein Film mit Russischen Untertiteln gesehen. ein bisschen geplaudert, aber es ist alles. Ich habe keine Lust das Radio zu hören, Grammatik zu studieren oder Memrise zu machen. Um ehrlich zu sein, ich habe Memrise noch wieder vergessen. Ich war heute auf meine Seite da, und ich habe gesehen, dass ich alle 1024 Elemente wässern muss. Jetzt interresiere ich mich, of ich es in einer Sitzung machen kann. Warum nicht? Ich kann zumindest versuchen.
Na ja, ich bin aber nicht so faul, wenn ich auf Deutsch hier schreibe, nicht wahr?
Ich habe eine Frage. Ich kann deutschen Humor auf vk.com ohne Probleme finden, aber mit Twitter oder Facebook kann ich das nicht machen. Ich weiß, dass Google mir auch helfen kann, aber es ist viel leichter jetzt zu fragen, und dann, wenn ich keine Antwort habe, suchen gehen. Der Humor kann irgenwo sein, aber ich mag mein Handy zu nutzen, als ich lese oder Bilder sehe, aber die Seite sind auch okay.

6WC, day thirty
I could also state that today is the day of laziness, but there's something even more dangerous and notable.
I mean insanity.
When I have written a poem in German today, I was okay with that because I kinda have done that before. But when my mind started to work out yet another one, I thought that this might be the time to panic.
I have posted the first one on lang-8, italki and Facebook, but the second one I can only place here. I have a hope that those who read my log long enough have more opportunities to at least try to understand this phenomenon of extremely lazy girl, who prefers to write poems instead of learning words or studying grammar.

This is a state of mental exhaustion when I am tired of learning languages and have to continue learning different stuff from tomorrow on. I did some reading, maybe will do more, but most of the time I'm stuck in 9GAG. Meh...

Oh, regardless of my laziness I had to write this:
August mit Deutsch
In diesem Monat habe ich viel Deutsch gelernt. Das schwierigste, das
ich machen musste, ist mich zu konzentrieren. Na ja, in den letzten
Tagen mache ich es gar nicht, aber ich bin nicht stolz darauf.
Ich habe viele neue Musik entdeckt, zum Beispiel “Der W“, “Die
Ärzte“. Ich habe viel Grammatik studiert, vielleicht, nichts neues, aber
es war wichtig meine Kenntnis zu systematisieren. Es bleibt doch
wichtig, und ich hoffe, dass ich es weiter machen kann.
Aber ich komme zurück zur meinen Universität morgen, deshalb
weiß ich nicht, ob ich viel machen kann. Ich kenne jetzt, dass ich
habe freie Samstage, aber nächste Woche gibt es ein Rennen von
Formel 1. Das ist wichtiger als Deutsch im Moment, weil Mercedes
gewinnen kann.
Ich habe doch immer Zeit, um etwas zu aufzuhören. Meine
Universität liegt nicht in meiner Nähe, also ich habe Zeit, als ich mit
einem Bus dahin fahre.
Ich möchte mich jetzt Erfinder der 6WC bedanken. Sie haben mich
inspiriert. Das ist mein erstes Mal, und ich bin mir sicher, nicht das
Letztes!
